Video: Cajun Catfish in the Oven
Video Transcript
Hi, I'm Kristin Koury and I'm a personal chef. Today, I'm going to show you how to make Cajun oven baked catfish. So I've got a couple fillets of catfish, some milk, some commercial fry mix that's got cornmeal, a little bit of flour in it but I also seasoned it with Cajun seasoning that has chili, basil, cayenne, paprika, salt and you can make that yourself or buy one already made. The first thing we're going to do is take our milk and pour it over our catfish fillets. They're then going to go in the refrigerator for an hour. Now that our catfish has been refrigerated for an hour I've got my dry mix all ready. I have some butter spray. I'm going to spray a parchment lined sheet and we're going to take each catfish out, let some of the milk drip off and dredge it. Try to keep one hand wet and one hand dry. Sometimes I forget but, give it a nice nice coating. That will make it crispy when it's done baking. Then one more step before we put it in the oven is you can spray the top with the butter spray or drizzle melted butter on it. I'm just going to use the spray. This really helps make it crispy in the oven. Then we put it in the oven for about ten, twelve minutes depending on how thick the catfish is. So after baking in the oven ten to fifteen minutes depending on how thick your fillets are, this is your oven baked catfish. Doesn't it look wonderful? Just going to put it on a plate here make it look good. You can serve this with some beans and rice, a little tartar sauce, maybe a little lemon juice, looks delicious. That's how you make oven baked Cajun catfish.
