Cantina Dom Domênico is a delightful reminder that for all its wealth of Amazon fruit and fish, Manaus is also a capital with great offerings in international cuisine.
Chef Antony Cavalli keeps his menu as concise as his cantina, a cozy affair which barely seats 40. Start your meal with the chef's praised bruschetta and move on to a prime selection of entrées featuring dry pasta imported from Italy or fresh made pasta - perhaps the four-chesse lasagna, which takes catupiry, or the Pappardelle Dom Laurindo, named for an ancestor and lavishly dressed with zucchini, shrimp and butter.
On Tuesdays, the chef serves risotto. One of the most famous is the due funghi, with shiitake and porcini.
About Chef Antony Cavalli:
A descendant of Italians, Antony Cavalli was already married when he decided to turn his informal passion for cooking into a career. After completing a program offered in Brazil by the Italian Culinary Institute for Foreigners, he ran an Italian food delivery out of his own kitchen until he opened Cantina Dom Domênico in 2006.
Born Carvalho, the chef changed his name to Cavalli in 2010 to honor his ancestors.
In 2010, Antony Cavalli was named Chef of the Year by Veja Manaus, a local guide published by Brazil's weekly magazine Veja.
