How to Air Dry a Chicken
- 1). Remove any giblets from the inside of the chicken. Dispose of the giblets if you will not be using them in the recipe, otherwise place in an airtight bag in the refrigerator until you are ready to use them. Rinse the chicken under cool tap water.
- 2). Pat the chicken completely dry with paper towels. Place the chicken on a large plate.
- 3). Season the chicken with herbs of your choice including salt, pepper and parsley.
- 4). Place chicken in the refrigerator uncovered for at least four hours. Chicken can be left in the refrigerator to air-dry for up to two days. Remove chicken from refrigerator, and roast in a roasting pan at the temperature and amount of time specified in your recipe.
