How to Cook a Half of a Beef Tenderloin
- 1). Preheat the oven to 350 degrees Fahrenheit. Tie the tenderloin snugly at two-inch intervals with kitchen twine. Tying the roast helps keep its shape, which contributes to uniform cooking and a clean presentation.
- 2). Add 2 tbsp. of olive oil to a saute pan large enough to accommodate the tenderloin and place over medium-high heat.
- 3). Dry the meat thoroughly with paper towels. Season the roast to taste with kosher salt and freshly ground black pepper.
- 4). Sear the meat in the saute pan until browned, approximately three minutes on each side. Place the tenderloin in a roasting pan and put it in the oven.
- 5). Roast the tenderloin for approximately 30 minutes, or until it reaches the desired temperature. Medium-rare has an internal temperature of 125 degrees Fahrenheit, medium measures 140 degrees Fahrenheit and anything beyond 160 degrees Fahrenheit is well-done. Insert the meat thermometer into the center of the tenderloin for an accurate reading: The ends cook faster than the center.
