How to Make a Chocolate Yule log

    • 1). Line a sheet cake pan with parchment paper. It will provide a strong support for moving the cake back from the baking pan to the work table.

    • 2). Mix the ingredients for a chocolate sheet cake. The cake should be one that is soft and spongy. Pour the mix onto the parchment paper, spread the mix to the edges and bake according to the directions on the box. Once the cake has finished baking, slide the parchment and cake out of the pan and allow to cool.

    • 3). Prepare the filling while the cake cools. The filling is where you can become creative with this recipe. The traditional filling is either a fresh whipped cream layer or it is a jellied layer of fruit such as cherries or raspberries. Mix both of these ingredients together to create a new light and tasty filling. Spread this filling across the cooled sheet cake. Distribute it evenly across the cake and square off the cake before rolling.

    • 4). Roll the layer cake down the length of the cake. When you reach the end and are looking for an ending point, place a wedge against the back of the roll so that it will not unroll. Turn the roll to make sure the seam is on the bottom of the roll.

    • 5). Make the frosting for the cake from either cream cheese or butter and allow it to rest for a few minutes. Spread the frosting over the log and leave a surface similar to natural tree bark. Make ridges of bark by using strips of licorice.

    • 6). Add final decorations to the log to make it appear more like a log from the forest. Small gumdrops or marzipan mushrooms to decorate the log and help the image of a real log. Place them along the length of the cake and at various points around the cake.
