Chicken and Turkey - Inexpensive and Healthy

Many people are trying to cut down on red meat in their diet and poultry, commonly chicken and turkey, are great ways to do this.
Don't get me wrong, I love red meat and regularly eat it and feed it to my family, but try to limit it too occasionally as it's high in fat and expensive among other things.
Instead we are eating much more poultry and the kids and I love it.
We sometimes buy whole chickens and roast them or cut then up ourselves.
They are usually less expensive, often much less, than other choices.
Chicken gets cooked with the skin on, which makes it moister, but the skin is all fat and usually discarded or fed to the dog.
The leanest and healthiest cuts of chicken and turkey include skinless chicken breasts, ground white meat chicken and turkey without skin added, white meat turkey, and skinless duck or pheasant which I love! Cornish game hen, skinless, is also good and really is just a baby chicken.
Turkey and chicken burgers are staples much of the summer, often interspersed with regular hamburger on occasion - we love both.
The trick with chicken or turkey patties is not to cook them too much as they dry out quickly.
We also often use ground chicken and turkey in recipes that call for hamburger or sometimes mix half and half.
Of course anything can be made unhealthy, for example battered and fried chicken.
We love that too, but try to have it only occasionally!
