When I first started the diet, I stayed away from the obvious no-no's such as simple carbs, yeast, molds, all fermented foods and drinks, but kept eating those more controversial foods that some doctors say no to, like wheat, caffeine, beans, tofu, potatoes.
As the diet became easier to handle, I've become more and more strict.
If you are vegan, being vegan, you will find, is both an advantage and a disadvantage: It's more difficult because you are going to really struggle with the protein issue (we need lots more than you're probably used to eating) but on the other hand, vegans have already developed a whole set of healthy food-eating skills that others may be new to, such as reading ingredients lists, being aware of what we put into our bodies, struggling in restaurants, etc.
When I started the candida diet, it was easier for me I think to take on that for others perhaps because I had turned vegan 6 years ago so being a 'dietary outlaw' was not new to me, nor was the concept of becoming super-aware of the foods I consume and their consequences.
