1Cut the deer carcass into pieces. If you do not know how to properly cut the deer, take it to a butcher.

Wrap the pieces of meat in freezer wrap. Make sure air is unable to come in contact with the meat. If you had to take the deer to a butcher, they will wrap the meat for you.

Store the deer meat in a refrigerator between 34 and 38 degrees. This temperature range is warm enough to keep the meat from freezing and cool enough to prevent bacteria from growing. Keep the meat in the refrigerator for three to 10 days. The older the deer is, the longer it must sit. Once the meat is tender to the touch, it is ready.

Put the wrapped deer meat in freezer bags. Remove as much air as possible from the bags and put them in a freezer until needed.
