How to Use Food Smokers

    • 1). Pour the wood chips into a large bowl. Add enough water to the bowl to cover the chips. Let them soak for 30 minutes. Only use wood chips specifically made for smoking food.

    • 2). Remove the water pan from inside the smoker and line it with one sheet of aluminum foil. Fill the pan with water and replace the pan.

    • 3). Remove the wood chip tray. Scoop the wood chips out of the water in the bowl and put them in the wood chip tray. Add the amount of wood chips called for in your recipe. Replace the lid on the tray and put it back in the smoker.

    • 4). Open any side vents on the smoker halfway. Open the vents on the smoker stack.

    • 5). Turn on the gas to your smoker. Press the ignition button and turn the burner heat up to high. Release the ignition button and close the door of the smoker. For a charcoal smoker, place the briquettes in the charcoal receptacle and light them.

    • 6). Wait for the wood chips to begin smoking. You will see smoke come out of the smoke stack when this happens. Open the smoker door and insert your food item.

    • 7). Close the smoker door and adjust the burner heat to the correct cooking temperature. Leave the food in the smoker for the time called for in your recipe. Don't opening the smoker door during cooking time because it releases the heat.
