My Favorite Feta Appetizer
Feta cheese marinated in olive oil and herbs is one of my favorite ways to transform a simple block of cheese into an unforgettable appetizer. Think of this recipe for lemon thyme feta as a starting point for infusing flavor into feta cheese and olive oil, then follow your own culinary instincts to create a blend of herbs and spices that you love.
What you need: 1 glass jar with a lid, 8 ounces of feta cheese, and enough olive oil to submerge the feta cheese (about 1 to 2 cups). Next, follow the recipe below or choose your own blend of herbs and spices to layer between the cheese. As a general guideline, use about 2 teaspoons of dried herbs or spices and a dozen or more sprigs of fresh herbs. Some ideas:
- Herbes de Provence
- Fresh herbs: rosemary, sage, thyme, dill
- Spices: peppercorns, red pepper flakes, coriander, fennel seeds
