How to Remove the Loin & Back Strap From a Deer
- 1). Insert the tip of the blade behind the front shoulder of the deer and lay the blade flat against the backbone.
- 2). Guide the blade down the backbone, the length of the spine, until you get down to the pelvic girdle.
- 3). Work the blade in and out over the uneven surface of the vertebrae and try to keep as much meat intact as you can.
- 4). Make a second cut along the shoulder. The shoulder cut should be perpendicular and about 4 inches wide.
- 5). Use the fillet knife to cut and lift the meat out of the spinal pocket. Repeat on the opposite side of the spinal column.
- 6). Pull the back strap from the deer with your hands.
