Crispy, salty Parmesan crisps are the perfect garnish for soft eggs.

Ingredients
  • 4 eggs
  • 1/2 tsp cider vinegar
  • 8 Parmesan Crisps (see below)
  • 1/4 cup finely grated Parmesan cheese
  • 1 Tbsp finely chopped fresh herbs. Try chives, tarragon or parsley
  • Salt and Pepper to taste

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes


  • Total Time: 25 minutes


Preparation

Prepare Parmesan Crisps.

Bring 6 cups of water to boil in a deep skillet, then turn the heat down so it is simmering. Add vinegar.

Break the eggs into a bowl, then slide them one at a time into the simmering water. Simmer eggs until the whites are firm, about 3 minutes. Use a slotted spoon to transfer the eggs to bowl.

Garnish each egg with 2 Parmesan crisps, grated Parmesan and herbs.
