DIY BBQ Smoker
- 1). Turn your trash bin onto its side. Make sure that your bin is brand new and well-rinsed. Trash bins previously holding garbage will make your meat taste like the same.
- 2). Put on your protective eyewear and gloves.
- 3). Use your handheld drill to create a 2-inch hole through the side of the bin about 1 inch from the bottom.
- 4). Place a hot plate in the bottom of the bin.
- 5). Run the cord through your hole. You may plug it directly into an outdoor socket or connect it to an extension cord.
- 6). Soak two large handfuls of mesquite chips in cold water for about 2 hours.
- 7). Drain away the water and place the soaked chips in a steel saucepan. Make sure that the pan is all metal; a plastic or wooden handle will be ruined by the heat.
- 8). Place the pan in the bin on top of the hot plate.
- 9). Set a cooling rack on top of the bin. This rack holds your meat.

Turn the hot plate on to medium low and wait until the soaked chips begin to smoke. - 11
Place your meat on top of the rack. Cover the meat with a large terracotta pot. The pot must be clean and unused, and should be large enough to cover the opening of the bin. Ensure that the pot stands high enough that it won't touch your meat while keeping most of the smoke inside the smoker.
