Ingredients
- Chocolate Quick Bread:
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 4 ounces (1 stick) softened butter
- 1 cup sugar
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup chopped pecans
- 1/4 cup semisweet chocolate chips
- Chocolate Honey Butter:
- 1/2 cup semisweet chocolate chips
- 4 ounces (1 stick) softened butter
- 2 tablespoons honey
- Prep Time: 10 minutes
- Cook Time: 55 minutes
- Total Time: 65 minutes
- Yield: 1 (9x5) Chocolate Quick Bbread
Preparation
- To make the chocolate quick bread: Heat oven to 350 degrees. Lightly coat a 9x5-inch loaf pan with cooking spray. In a medium bowl, whisk together flour, cocoa, salt, baking powder and baking soda.
- In a separate large bowl, beat 4 ounces butter with sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually beat in the flour mixture alternately with the buttermilk. Stir in 1/4 cup of the pecans and pour into the prepared pan.
- Bake 20 minutes. Top with 1/4 cup chocolate chips and remaining 1/4 cup pecans. Return to oven and bake 30 to 35 minutes or until toothpick tests clean. Cool in pan on wire rack for 10 minutes. Remove from pan and cool completely on wire rack. Slice and serve with Chocolate Honey Butter.
- To make the chocolate honey butter: In a heatproof container, microwave 1/2 cup chocolate chips for 30 seconds. Stir and continue to microwave in 10-second bursts until completely melted. Let cool. Beat melted chocolate with 4 ounces softened butter and 2 tablespoons honey until fluffy.
