How to Season Mozzarella Sticks
- 1). Measure 1/2 cup of flour per pound of mozzarella sticks and put it in a bowl or shallow dish. Sprinkle 2 tbsp. of cayenne pepper or crushed red pepper or 4 tbsp. of spicy paprika and salt and pepper to taste onto the flour. Stir to distribute the seasonings evenly throughout the flour. Toss the mozzarella sticks in the seasoned flour.
- 2). Crack 4 eggs per pound of mozzarella sticks into another bowl or shallow dish and lightly beat them with a fork until whites and yolks combine. Dip floured mozzarella sticks into the egg wash, turning them to coat all sides.
- 3). Pour 1 1/2 cups of breadcrumbs into a third bowl or shallow dish. Sprinkle 3 tbsp. of dried oregano or dried mixed Italian seasoning or 6 tbsp. of finely chopped fresh chives onto the breadcrumbs. Stir to distribute the seasonings evenly throughout. Dip the floured and egg-coated mozzarella sticks into the seasoned breadcrumbs and turn them to coat all sides.
- 4). Season the mozzarella sticks with additional salt and pepper, if desired, immediately after removing them from the hot oil.
