Stir-Frying Tips
In small bowl, combine curry powder, ketchup, beef broth, pineapple tidbits, and 1 tablespoon cornstarch; mix well and set aside.
Heat a large skillet over high heat. Add 1 tablespoon oil and stir-fry beef mixture until browned, about 2 minutes.
Remove beef and set aside. Wipe out skillet.
Add remaining 2 tablespoons oil to skillet. Add onion, garlic, and ginger root; stir fry for 3 minutes. Add red bell pepper; stir fry for 1 minute. Stir ketchup mixture and add to skillet; stir fry for 1 minute until thickened. Add beef and stir fry for 1 minute longer. Serve immediately over hot cooked rice.

- 2 tablespoons soy sauce
- 1 tablespoon cornstarch

- 1/2 cup beef broth
- 1 (8-ounce) can pineapple tidbits, undrained
- 1 tablespoon cornstarch
- 3 tablespoons oil, divided
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon minced ginger root
- 1 red bell pepper, chopped
