Christmas Cookies
'Tis the season to start baking some of those favorite Christmas Cookies. Here are a few of mine.
Baking sugar cookies is the perfect family activity. The older kids (5th grade and up) can make the dough. Younger kids (2nd to 4th grade) can roll-out the dough and cut it with cookie cutters. Even preschool, kindergarten kids can sprinkle sugars and frost cookies once they're baked.

Linzer Cookies are similar to a shortbread cookie only served as a sandwich cookie with jams or jellies in between. The most distinguishable part about these cookies is the hole in the top of the cookie. These cookies are typically made with a Linzer Cookie Cutter with specially-shaped inserts like the one I have with the Christmas symbols.

This is my Aunt Wanda's recipe for Ginger Cookies. I think they are good anytime of year, but especially with a cup of tea or coffee on a cold day - all those spices just fill your mouth when you eat this soft cookie.

Biscotti are twice-baked Italian cookies that come in many different flavor variations. I like my biscotti served with a cup of hot tea. Others like to dunk theirs in a cup of coffee. Biscotti also makes the perfect homemade gift as they are sturdy and ship easily.

I don't know maybe it's just a Southern U.S. thing, but I love my Pecan Tassies, especially at Christmas. They're like miniature pecan pies.
