Chickpea, Corn and Shishito Pepper Salad
This gorgeous salad is a filling vegetarian dish, but tastes even better when served next to steak.
Shishito peppers are long, thin sweet peppers with a hint of pleasant bitterness and an occasional spicy kick. They are popular in Japan and can be found at many grocery stores and farmers markets. The peppers are often served whole, quickly seared or grilled until they blister and then topped with salt.
